Red wine Shiraz (Syrah in other sources) is fragrant with notes of blackberry, mint and black pepper. If the summer was too hot, the wine loses some of its astringency and sourness, becomes fuller, velvety, "jam", notes of spices, licorice, anise, and leather appear.
